What is Caramel Colour?

Caramel colour, also known as sugar colour or caramel syrup, is a brown food colouring classified under E150. It is produced by controlled heating of sugar and is used to colour foods such as sauces, baked goods, desserts, beverages, and savory ready-to-eat products. In professional production, several types exist, mainly E150c and E150d, which differ in production method and functional properties.

E150a–d, with E150c and E150d preferred for demanding industrial applications due to superior stability.

Differences between E150c and E150d

E150c is made with ammonium compounds, while E150d also contains sulfite compounds. E150d is more robust, colour-intense, acid- and electrolyte-stable, and ideal for complex beverage recipes and sauces.

Caramel colour is applied in sauces, baked goods, desserts, beverages, and meat/convenience products.

Dosage & efficiency

Due to high concentration and consistent quality, only 3–5 g per kg of end product is typically required, ensuring efficient, economical, and reproducible results.
